Wren's Recipes: Pink Pancakes

This pancake is so yummy and fluffy (also happens to be gluten free/ dairy free) Don't get turned off by the beet thing - they make them pinky red and so pretty and add a sweetness to them. Not just for valentines day - we make these on the regular. Hope you enjoy! 

Ingredients: 

3x Fresh roasted beets (or canned) - about 1/2 a cup 

1.5 Cup GF oats

1 tsp baking powder

2 eggs

2 tsp vanilla 

1 ripe banana 

1/2 Cup almond milk 

3 tbsp maple syrup 

Directions: 

Combine all ingredients in a blender (include cooled beets).

Heat pan over medium low heat - add coconut oil or butter. When the pan is hot, using 1/4 measuring cup - pour small sized pancakes into pan. 

Cook 2-3 mins a side, flip and do the same on the other side. Top with nut butter, berries, syrup... and good plain!!
