If you have a hard time getting your kids to eat fish this is a great recipe. Made a healthier copycat version of McDonalds fish fillet and the whole fam is into it... which is super rare. Made it healthier by pan frying instead of deep frying, and top it with quality ingredients - also love using small slider buns for this. Hope you guys like it!
1.5x pound Alaskan Cod
2x cup buttermilk
2x cups breadcrumbs
1x tbsp salt
8 slices cheddar cheese
Bread and Butter pickles
Oil for frying
Preheat oven to 450F
Cut fish into 4" inch pieces (or whatever size fits best on the buns) Place them in a bowl with buttermilk for 30 mins to 1 hr
Combine breadcrumbs and salt on a plate and dredge fish in mixture (press fish in so pieces flatten a bit)
Heat enough oil in the pan so it covers the bottom (over medium high heat). Fry fish in batches 3-4mins a side (don't overcrowd pan). When fish is cooked place on a paper towel to drain oil.
Take buns - on one side brush with a bit of butter or olive oil and on the other side put a slice of cheese. Bake 450F for 4-5mins until toasted.
Assembly - place fish in buns, top with pickles and mayo - or ketchup.
*to make healthier ... use yogurt instead of mayo and lettuce instead of the bun!
Serve with fresh fries and enjoy!!
