Wren's Recipes: Easy Sheet Pan Tomato Soup

Legit the easiest recipe and one of the tastiest soups! All Wrens kids love it - serve with grilled cheese “croutons” or dippers, a quesadilla or just enjoy on its own!


- 6-8 large tomatoes sliced
- 1/2 red onion sliced
- 2 cloves garlic smashed
- 4-6 basil leave
- 1 cup veg stock
- olive oil
- salt


- heat oven to 375F
- place tomato slices, onion, basil and garlic on a baking tray with parchment (tuck basil and garlic under tomatoes so they don’t burn)
- drizzle 2 tbsp olive oil and sprinkle with salt
- bake 30-40 mins
- place all ingredients in a blender
- add a bit of stock to thin out (not necessary)
depending on thickness
- when blending leave lid off and place dishcloth on top if liquid is hot - otherwise will splatter everywhere!!)
- optional - add a tbsp of butter or a drizzle of olive oil if your soup tastes too acidic and salt to taste
- top soup with grilled cheese “croutons”
