Wren's Recipes: Apple Carrot Fritters

Recently, Wren was challenged by Food Dudes and UJA to create a recipe for the Community Food Share Challenge. The goal was to create a unique recipe using only food found in their meal kits, which are given out to those who don't have access to groceries. Wren came up with a fresh take on fritters, read on for the recipe! 


1 apple, peeled and grated
3 carrots, peeled and grated
1 onion, chopped and lightly sautéd
Bread Crumbs
1/2 cup bread crumbs
2 teaspoons salt
1 egg
oil for frying



1) Heat oil over medium heat.
2) Drain liquid from carrots and apple so mixture is dry.
2) Add onion, bread crumbs, salt and egg to the carrots and apple and mix thoroughly. Form into golf ball sized rounds and flatten.
3) Fry each fritter in the oil for about 3-4 minutes each side. You want the fritters to be nice and crispy on each side.
4) Drain on paper towel and serve with your choice of dipping sauce.
