Wren's Recipe: Crispy Latkes

The crispiest Latkes ever 

baking soda is the secret (and grating the potatoes and onions!!) Top with apple sauce or sour cream


2 baking potatoes peeled 

1/2 yellow onion

 1 egg 

1/4 cup breadcrumbs

 1/2 tsp baking soda 

1 tsp salt 


Using a box grater, grate potatoes and onion. 

In a thin dish towel or cheesecloth, squeeze out all the liquid from them. 

Drain water and combine potato, onion, breadcrumbs, egg, baking soda and salt. 

Mix until combined. 

Heat about 1 cup canola oil in a cast iron skillet over medium high heat.

 Using 1/4 cup form small patties (pressing mixture together with your hands). 

Place in hot oil and press patties down with a spatula so they are nice and thin.

 Fry 4-5 mins a side and then flip and cook for an additional 2-3 mins until crispy. 

Drain on a paper towel and serve with applesauce or sour cream.
