Lemon Ricotta Pasta

Linguine or fettuccine
2 tbsp butter
Zest from 1 lemon
Juice from 1 lemon
1 cup parm
1 cup full fat ricotta (must be full fat!)
1/2-3/4 cup pasta water
1. Cook pasta according to directions
2. Whip ricotta in cuisinart with a pinch of salt until smooth.
3. Over medium heat, brown butter (about 3-4 minutes), add in lemon zest, lemon juice and pasta water.
4. Add in pasta and parm. Combine and salt to taste.
5. Assembly - smooth ricotta on the bottom of your dish, place pasta on top.
6. Garnish with a bit more lemon zest and parm (and pepper if your kids will eat it).
