Flourless Banana Muffins

These blender flourless banana muffins are a staple in our house. This take on healthier banana muffins is perfect for breakfast or as a snack. They are so easy to make and taste delicious. Just toss all the ingredients into a blender for a quick treat for you and the kids. I always double the recipe and freeze them (they are great for travel days too).


Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • 1 cup peanut butter (or nut butter of choice)
  • 3 tbsp maple syrup
  • 2 tsp baking powder
  • Optional: chocolate chips

Directions:

  1. Preheat the oven to 400°F
  2. Put all the ingredients into a blender until smooth
  3. Stir in the chocolate chips (optional)
  4. Scoop the batter into 12 lined muffin tins
  5. Bake for 12-14 mins
