Flourless Banana Muffins
These blender flourless banana muffins are a staple in our house. This take on healthier banana muffins is perfect for breakfast or as a snack. They are so easy to make and taste delicious. Just toss all the ingredients into a blender for a quick treat for you and the kids. I always double the recipe and freeze them (they are great for travel days too).
Ingredients:
- 2 ripe bananas
- 2 eggs
- 1 cup peanut butter (or nut butter of choice)
- 3 tbsp maple syrup
- 2 tsp baking powder
- Optional: chocolate chips
Directions:
- Preheat the oven to 400°F
- Put all the ingredients into a blender until smooth
- Stir in the chocolate chips (optional)
- Scoop the batter into 12 lined muffin tins
- Bake for 12-14 mins
