Baked Chicken Schnitzel

One of the easiest weeknight meals (and a fam favourite) - you won’t miss the fried version of this recipe!!

4 x chicken breasts
1 x cup flour
1/2 tbsp paprika
2 x eggs
2 x cups breadcrumbs
Zest 1 lemon
Olive oil
Juice 1/2 lemon


1. Preheat oven to 425F.

2. Cut chicken breasts in half so they are half the thickness.

3. Set up a breading station - mix flour and paprika on a plate, beat eggs in a separate bowl, and combine breadcrumbs and lemon zest and some salt.

4. Working one piece at a time - coat chicken in flour, then egg mixture (drip off excess) and press into breadcrumb mixture. Repeat and place chicken on a spray parchment lined baking tray.

5. Drizzle a bit of olive oil onto each cutlet and bake 8 mins. Flip and bake another 8 mins.

6. Remove from over and squeeze 1/2 lemon over top and sprinkle with a bit of kosher salt.
