Summer Cooking Series Ft. Gary

Nicoise Summer Salad



  • Butter lettuce 
  • Cherry tomatoes 
  • Baby potatoes 
  • Eggs 
  • Tuna steak (or salmon/ chicken) 
  • Cucumber 
  • Radish 
  • Green beans 
  • Nicoise Olives 


  • 1/2 cloves garlic 
  • 1 tablespoon Dijon 
  • 2 tablespoon Red Wine Vinegar 
  • 1/2 cup olive oil 
  • Salt and pepper




  1. Pre-heat oven to 425F 
  2. Bake tomatoes (whole) with olive oil and salt for 30 mins until blistered. Toss once cooked with a bit of chopped basil. 
  3.  Boil potatoes 15 mins, then using the base of a cup smash until thin. Drizzle with olive oil and salt and bake 30 mins (or longer until crispy) 
  4. Sauté green beans in olive oil over medium high heat. When they start to get crispy add garlic for the last minute. Salt to taste. 
  5. Cook eggs for 6 mins in boiling water (will be jammy and perfect!
  6. Season tuna steaks with olive oil, salt and pepper. Grill 1-2 mins a side (so that it’s rare). 
  7.  Assemble all ingredients on a big tray. Top with salad dressing and enjoy!
