Taco Tuesday just got a whole lot easier with Wren's delicious tacos done two ways — beef or cauliflower — take your pick!
1/4 orange juice
2 tablespoons tamari
1 1/2 teaspoon chilli powder
1 teaspoon oregano
2 limes, squeezed
2 tablespoons apple cider vinegar
handful of cilantro (optional)
2 heads of cauliflower
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon paprika
toppings of choice: salsa, cheese, guacamole, shredded cabbage, yogurt or sour cream, jalapeños
1) Marinate flank steak in orange juice, tamari, 1 teaspoon chilli powder, oregano, limes, apple cider vinegar and cilantro. Be sure to toss frequently to ensure steak is fully covered.
2) Meanwhile, cut cauliflower and place on a parchment lined baking sheet. Add olive oil, garlic powder, cumin, paprika and remaining chilli powder. Mix thoroughly with hands and spread on sheet. Bake in 400F for about 20-30 minutes.
3) Heat grill pan over medium heat and spray with cooking spray. Wipe all herbs off steak and place on hot grill for about 5 minutes each side for medium rare. Let rest for about 10 minutes.
4) Slice the steak very thin against the grain (opposite direction of the lines on the steak) to avoid chewiness. Serve cauliflower or steak on corn tortilla with your choice of toppings.
