Make Wren's sweet and tangy maple tamari salmon paired with delicious coconut rice — a win for kids and parents!
2 filets of rainbow trout or arctic char (make sure it is thin, not thick which will take longer to cook)
2-3 tablespoons tamari
2 tablespoons maple syrup
1 tsp sesame oil
toppings like sesame seeds, green onion and sriracha
2 cups jasmine rice (or rice of choice)
1 can full fat coconut milk
1 1/2 cups water
1) Combine the
tamari, maple syrup and sesame oil together. Marinate the fish in the mixture overnight or at least 1-2 hours.
2) Combine rice, water and coconut milk in a pot and bring to a boil. Reduce heat and simmer 15-20 minutes until rice has absorbed all the liquid.
3) Set oven to broil. Cook fish on top rack for five minutes.
