Make Wren's sweet and tangy maple tamari salmon paired with delicious coconut rice — a win for kids and parents!

Maple Tamari Salmon

2 filets of rainbow trout or arctic char (make sure it is thin, not thick which will take longer to cook)

2-3 tablespoons tamari

2 tablespoons maple syrup

1 tsp sesame oil

toppings like sesame seeds, green onion and sriracha

2 cups jasmine rice (or rice of choice)

1 can full fat coconut milk

1 1/2 cups water

1) Combine the  tamari, maple syrup and sesame oil together. Marinate the fish in the mixture overnight or at least 1-2 hours.
2) Combine rice, water and coconut milk in a pot and bring to a boil. Reduce heat and simmer 15-20 minutes until rice has absorbed all the liquid.
3) Set oven to broil. Cook fish on top rack for five minutes.
4) Top fish with sesame seeds, green onion or sriracha for adults. Kids love more  tamari.
5) Serve fish with a side of rice and enjoy!
